This is a great story! Take a few minutes and read this recent article from the New York Times. It’s a feature about a powerful victory where one man’s vision and tenacity overcame major challenges from regional energy “giants” by utilizing town hall meetings and radio interviews—and popular opinion in favor of the Bluewater Wind project eventually won out. When a study by a University of Delaware professor showed that Delaware’s coastal winds were capable of producing a year-round average output of over 5200 megawatts, or four times the average electrical consumption of the entire state, wind entrepreneur Peter Mandelstram decided this was the project he wanted to take on. There’s a great new website (beta version but it worked perfectly when we tested it) for the Pennsylvania Buy Fresh Buy Local home. Easy to navigate, locations are broken down by region and classified as farms, farmers markets, restaurants, wineries & retail stores. Spend a few minutes and find out everything that’s close to you. We found plenty of resources that are nearby but that we didn’t know about—but we’ll be scheduling a visit to several now!

Preheat oven to 350°F. Melt butter in a medium saucepan over low heat. Add 2 Tbsp. erythritol to butter and stir to dissolve. Continue stirring butter and erythritol and incorporate cocoa. Add milk and turn heat to medium while whisking. Once fully mixed, remove from heat and allow to cool. Separate eggs. In an small bowl, beat egg whites with remaining erythritol on high speed until soft peaks form. Whisk egg yolks into cooled cocoa mixture (NOTE: if the chocolate mixture is too hot, you will have scrambled eggs, not soufflé). Fold cocoa mixture gently into egg white mixture. Spoon into 4 small (7 oz) ramekins and bake at 350 for 20 minutes.
*You can find organic erythritol at your local health food store, or sometimes in the baking section of regular grocery stores. It is an extremely low glycemic but healthy,good tasting, low calorie, natural sugar alcohol with minimal effect on blood sugar. Great in most recipes to replace sugar.
